Calabacita is a type of squash that looks and tastes similar to a zucchini. This vegetable is a staple in Mexican dishes, is used in sauces as a thickener and as an ingredient in stews and soups.
Look for calabacita that are small to medium-sized (no longer than 6 to 8 inches). They should be firm and free of nicks and cuts. The freshest calabacita will bristle with tiny hairs.
