Jalapeno Pineapple Poppers with Bacon (Tropical Poppers)
Most folks are familiar with this popular pepper. From poppers to nachos, this pepper gets lots of play. But, FRESH (not pickled) versions provide a world of culinary possibilities beyond the ballpark. A staple in our home state’s famous Tex-Mex cuisine, these peppers offer just the right amount of heat and flavor to make your taste buds sizzle.
Jalapeno peppers should be firm, smooth-skinned and have solid coloring. A chili pepper with “dry lines” is an edible, more mature pepper, and quite likely spicier than those peppers without the lines.
