Honeydew Breakfast Parfaits

Honeydew Breakfast ParfaitFruit Layer

1 honeydew, cut in ½” squares
1 pound strawberries, sliced
1 tablespoon honey
3 Tablespoons lime juice

Toss all ingredients together gently.

Granola Layer

1 1/3 cups + ¼ cup  almond granola

Yogurt Layer

16 ounces vanilla yogurt
¼ cup sweetened shredded coconut
2 tablespoons lime juice
1 ½ tablespoons honey

Mix together yogurt and coconut. Add lime juice and honey and stir to combine.

To assemble parfaits:

Have four glasses ready to fill. Divide half of the fruit mixture between all four glasses. Next, divide the 1 1/3 cups granola evenly among the four glasses (1/3 cup each). Divide the yogurt mixture between the four glasses. Next, divide the remaining fruit between the four glasses, keeping the fruit towards the center of each glass. Finish by adding 1 tablespoon of granola to each parfait- use the granola to garnish the outer edges of each, circling the fruit.
