New Orleans Style Citrus Lime King Cake

Ingredients:New Orleans Style Citrus Lime King Cake

Dough:
1 cup warm milk
2 eggs, room temperature
6 Tablespoons butter, melted
½ cup sugar
2 ¼ teaspoons yeast (1 package)
4 ½ cups all purpose flour
1 ½ teaspoon salt 

Watermelon Salsa:
2 tablespoons butter, soft
8 ounces cream cheese, soft
2 teaspoons flour
1 teaspoon vanilla
Zest of one orange
Zest of 2 limes
¾ cup confectioners sugar

Egg wash:
1 egg, pinch of sugar, pinch of salt.  Mix together.

Icing:
3 1/3 cups confectioners sugar
Juice of 3 limes (about 1/3 cup)

Icing:

Yellow, Green, and Purple sanding sugar
Plastic tiny baby figurine

Directions:

Whisk together milk, 1 teaspoon of the sugar, and yeast in bowl of stand mixer.  Let proof for 5 minutes.  Add eggs and butter, then flour, sugar, and salt.  Mix with dough hook on low for one minute, or until all ingredients are mixed, then mix on medium speed for 4 minutes.  Cover and let rise in a warm place until doubled, 1 ½ – 2 hours.  Preheat oven to 350°.  Roll dough into a 12” x 24” rectangle.  Mix together ingredients for cream cheese filling, and spread on rectangle.  Roll into cylinder, lengthwise, and seal.  Place on a parchment lined baking sheet and form into a circle.  Let rise until almost double.  Brush with egg wash.  Bake for approximately 40 minutes, until golden brown.  Cool.  Add the plastic baby by gently pushing it into the bottom of the cake somewhere. Mix together icing ingredients and drizzle over cake.  Finish cake with sanding sugar in yellow, green, and purple. Celebrate!
