Roasted Pork Loin Sliders with Fresh Watermelon Salsa

Ingredients:Roasted Pork Slider with Watermelon Salsa

1 pork tenderloin

Spice rub:
2 teaspoons paprika
1/8 teaspoon cayenne pepper
1 teaspoon garlic salt
1/4 teaspoon cumin
1/8 teaspoon cinnamon
1/8 teaspoon ground thyme
2 tablespoons canola oil
1/2 cup dry white wine
1 cup honey barbecue sauce
8 mini kaiser rolls
8 cabbage leaves

Watermelon Salsa:
1 cup diced Moonlit Farms watermelon
1 jalapeno, membranes removed, minced
1/2 cup diced Moonlit Farms onion
3 tablespoons chopped cilantro
1 teaspoon lime juice


Preheat oven to 325 degrees. Combine paprika, cayenne, garlic salt, cumin, cinnamon and thyme. Sprinkle evenly over pork loin. Heat oil in dutch oven, brown pork loin on all sides. Remove from heat, pour wine over roast. Cover and bake for 25-30 minutes, or until thermometer registers 145 degrees.

While pork is roasting, combine watermelon, jalapeno, onion, cilantro, and lime juice. Salt to taste.

To assemble sliders, layer slices of pork loin on kaiser rolls, followed by barbecue sauce, a cabbage leaf, and watermelon salsa.
