Ingredients:
2 large sweet onions
¼ cup canola oil
3 cloves garlic
2 bay leaves
1 ham hock
2 quarts extra hearty beef stock
Directions:
This is a very simple soup intended to be made in very few steps
- Begin by peeling onions and garlic, dice garlic and slice or julienne onion
- Using a medium sized stock pot heat canola oil, sauté onions for 45 minutes until golden brown
- Add garlic, bay leaves, ham hock and beef stock, bring to a boil
- Let simmer for 3-4 hours until onions are tender and ham hock is edible
- Enjoy this soup with a fresh baguette
