Mediterranean Stuffed Sweet Onion Bulbs
Ingredients:
3 medium sized sweet onions
2 cups Basmati rice
1/2 lb diced beef chuck
1 tablespoon tomato paste

1 can diced tomatoes
1 oz lemon juice
Salt
Pepper
Saffron (optional) |
Directions:
- In a large bowl, combine rice, beef chuck, tomatoes, and tomato paste. Add salt, pepper and saffron to taste
- In medium-size stockpot, bring water to boil. Add peeled onions, allow to poach for 20 minutes (or until tender)
- Cut off the root end of each onion and make an incision down the side. Peel back each individual onion layer
- Stuff each layer with rice mixture, and wrap like a burrito
- Fill casserole dish with stuffed onions and sprinkle with lemon juice
- Cover with foil and bake at 350° for 90 minutes or until rice is cooked.
