Buttermilk Battered Sweet Onion Rings

Ingredients:

1 quart buttermilk
6 small sweet onions
1 lb all-purpose flour
Cajun spice (optional)
Salt
Pepper
½ gallon canola oil
 

Directions:

  1. Place buttermilk in a pitcher or large bowl
  2. Peel and clean all onions, smaller sized onions are recommended
  3. Slice the onions into rings starting at the root. They should be about 1/4 inch thick
  4. Soak onion slices in buttermilk for 2 days
  5. At the end of the second day, drain the buttermilk from the onions
  6. Place the onions in a large Ziploc bag (this may take two bags)
  7. Add flour, spice, salt and pepper to taste to the bags, and shake the bags to ensure all onions are completely coated. The onions should be dusty, not doughy. If dough-like just add more flour.
  8. Heat canola oil to 375 degrees, and fry onions until golden brown
