Flank Steak with Caramelized Sweet Onion

Ingredients:

1 sweet onion
¼ cup canola oil
2 lbs flank steak
Salt
Pepper
 

Directions:

  1. Peel and slice sweet onion.
  2. Heat medium sized sauté pan to medium heat, add canola oil and sauté onion for 45 minutes until brown and caramelized (careful not to burn onions!)
  3. Heat a grilling surface to its hottest temperature
  4. Season flank steak with salt and pepper (you can use your favorite marinade if you choose)
  5. 10 minutes before the onions are finished, place the meat on the grill
  6. Depending on the thickness, it should take about 5 minutes per side of beef to cook medium rare
  7. Remove meat from grill, cover with foil, and let rest for 5-10 minutes 8. Slice meat thin and present on a platter, smother the surface with caramelized sweet onions
