Ingredients:
- 1 cup sugar
- Sliced pineapple - 8 rings, each ¼” thick, at room temp.
- 3 T. butter
- 1 oz. rum
- Dash salt
- 1 t. vanilla
Directions:
Caramelize sugar by heating a saucepan over medium high heat until hot, then adding sugar, a small amount at a time, until all sugar melts. Stir to melt sugar. Turn down heat to medium low. When sugar reaches an amber color, add butter. Stir until melted. Add pineapple rings, cook pineapple in sugar mixture until tender and golden, about 8 minutes. Remove from heat. Remove pineapple slices from sauce. Add vanilla, rum, and salt to sauce, place back on heat and stir until combined. Serve sauce warm over ice cream and garnish with caramelized pineapple. May also garnish pineapple cheesecake with this recipe.
