Frontera Golden Pineapple Raspberry Vinaigrette

Serves 4

Ingredients:

  • ½ Frontera Golden Pineapple, skin removed and diced
  • ½ cup Water
  • 1 Garlic clove, peeled
  • ½ tablespoon Dijon mustard
  • 1 tablespoon Honey
  • 1 tablespoon granulated sugar
  • ¼ cup Red wine vinegar
  • ¼ cup Pineapple juice
  • 1 ½ cups Olive oil
  • ½ small container of fresh sweet raspberries

Directions:

  1. In a blender or food processor, add the diced pineapple chunks and water. Blend to combine.
  2. When blended, turn off the blender and add the next six ingredients. Pulse until all ingredients are smooth.
  3. With the blender on low speed, remove the top and slowly stream in the olive oil to the mixture being careful not to add the oil too quickly.
  4. Slowly add oil until vinaigrette begins to thicken.
  5. Once juice and oil have combined, slowly pulse in the raspberries.
  6. Pour the dressing from the blender into a serving container. Add salt to taste and chill before serving
