Serves 4
Ingredients:
- ½ Frontera Golden Pineapple, skin removed and diced
- ½ cup Water
- 1 Garlic clove, peeled
- ½ tablespoon Dijon mustard
- 1 tablespoon Honey
- 1 tablespoon granulated sugar
- ¼ cup Red wine vinegar
- ¼ cup Pineapple juice
- 1 ½ cups Olive oil
- ½ small container of fresh sweet raspberries
Directions:
- In a blender or food processor, add the diced pineapple chunks and water. Blend to combine.
- When blended, turn off the blender and add the next six ingredients. Pulse until all ingredients are smooth.
- With the blender on low speed, remove the top and slowly stream in the olive oil to the mixture being careful not to add the oil too quickly.
- Slowly add oil until vinaigrette begins to thicken.
- Once juice and oil have combined, slowly pulse in the raspberries.
- Pour the dressing from the blender into a serving container. Add salt to taste and chill before serving
