Ingredients:
Serves 3
2 lbs cooked shrimp
1 avocado
½ cup cantaloupe
½ cup honeydew
1 Anaheim chili
½ cup white onion

½ cup papaya
½ cup watermelon
1 bunch cilantro
1 cup cocktail sauce
3 limes
pepper
salt |
Directions:
- Gather a medium sized bowl, cutting board, and sharp knife
- Remove all seeds and skin from all fruit and vegetables and dice into similar size and shape
- Combine diced vegetables with lime juice, salt and pepper in bowl
- Mince cilantro, add to mixture
- Add cocktail sauce to base of a serving dish (4-6 ounces in size)
- Add hefty spoonful of vegetable mixture to surface of cocktail sauce
- With presentation in mind, place shrimp around serving dish
- Garnish with lime and cilantro
